Ingredients

  • 4 large flour tortillas 10-inch burrito size
  • 2 cups 280g cooked chicken, shredded or finely diced -
  • 2 cups 200g shredded Mexican blend cheese or Monterey Jack -
  • 1 bell pepper finely diced (about 1 cup)
  • 1 tablespoon taco seasoning -
  • 1 tablespoon butter or neutral oil for the pan (plus more as needed)
  • Salsa sour cream, and lime wedges, for serving (optional)

Method

  1. Toss the chicken, diced bell pepper, and taco seasoning together in a bowl until evenly coated.
  2. Heat a large skillet over medium heat for 1 minute; add butter or oil and swirl to coat.
  3. Lay a tortilla in the pan; sprinkle 1/4 cup cheese over one half, top with 1/2 cup chicken mixture, then another 1/4 cup cheese.
  4. Fold the tortilla over the filling and cook 2–3 minutes until deep golden underneath.
  5. Flip carefully and cook 2 more minutes, pressing gently, until crisp and the cheese is melted.
  6. Rest 1 minute on a cutting board, cut into 3 wedges, and repeat with remaining tortillas.

Notes

Keep the filling dry for maximum crisp; hold finished quesadillas on a wire rack in a 200°F (95°C) oven so the bottoms stay crisp. Freshly grated cheese melts smoothest.
