Black Bean Tacos

The vegetarian 20 minute dinner that converted me completely. Smoky spiced black beans in crispy shells with all the toppings. Ten minutes, cheaper than meat tacos, just as satisfying. My non-vegetarian husband requests these specifically now.

Ingredients
  

  • 2 cans black beans drained rinsed
  • 8 taco shells
  • 1 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Half teaspoon smoked paprika
  • Quarter teaspoon chili powder
  • Salt to taste
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • Salsa sour cream lettuce tomato to serve

Method
 

  1. Step 1: Heat olive oil in pan over medium heat
  2. Step 2: Add black beans and all spices stir well
  3. Step 3: Add water stir to coat every bean with spices
  4. Step 4: Cook 5 to 6 minutes until hot and fragrant
  5. Step 5: Roughly mash one third of beans with fork
  6. Step 6: Warm taco shells in oven 2 minutes
  7. Step 7: Fill shells with beans top with cheese and all toppings
  8. Step 8: Serve immediately with lime wedges

these taste almost meaty
— Rough mashing helps beans
