Ingredients
  

  • 4 large flour tortillas burrito size works best
  • 8 slices pre cooked bacon or cook your own if you prefer
  • 2 cups romaine lettuce roughly chopped
  • 2 medium ripe tomatoes sliced or diced
  • 1 ripe avocado sliced
  • 4 tablespoons good quality mayonnaise
  • 1 teaspoon lemon juice stirred into mayo
  • Salt and black pepper to taste
  • Optional: handful of shredded cheddar cheese

Method
 

  1. Step 1: Mix mayo with lemon juice and tiny pinch of salt — this simple upgrade makes a real difference
  2. Step 2: Warm tortillas in microwave 20 seconds wrapped in damp paper towel — warm tortillas are much easier to roll without cracking
  3. Step 3: Lay tortilla flat spread 1 tablespoon lemon mayo evenly leaving 2cm border around edges
  4. Step 4: Layer lettuce across center of tortilla leaving the border clear
  5. Step 5: Add tomato slices on top of lettuce season with salt and pepper
  6. Step 6: Add bacon pieces broken roughly in half
  7. Step 7: Add avocado slices across the top
  8. Step 8: Add cheese if using
  9. Step 9: Fold both sides of tortilla in toward center then roll up tightly from bottom pressing firmly as you go
  10. Step 10: Slice diagonally in half with sharp knife serve immediately
