Method
- Step 1: Mix mayo with lemon juice and tiny pinch of salt — this simple upgrade makes a real difference
- Step 2: Warm tortillas in microwave 20 seconds wrapped in damp paper towel — warm tortillas are much easier to roll without cracking
- Step 3: Lay tortilla flat spread 1 tablespoon lemon mayo evenly leaving 2cm border around edges
- Step 4: Layer lettuce across center of tortilla leaving the border clear
- Step 5: Add tomato slices on top of lettuce season with salt and pepper
- Step 6: Add bacon pieces broken roughly in half
- Step 7: Add avocado slices across the top
- Step 8: Add cheese if using
- Step 9: Fold both sides of tortilla in toward center then roll up tightly from bottom pressing firmly as you go
- Step 10: Slice diagonally in half with sharp knife serve immediately
