Ingredients
  

  • 4 chicken breasts
  • 8 slices fresh mozzarella
  • 2 cups cherry tomatoes halved
  • Fresh basil leaves handful
  • 4 tablespoons balsamic glaze
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Step 1: Season chicken generously with salt and pepper
  2. Step 2: Heat olive oil in large oven safe pan over medium high heat
  3. Step 3: Cook chicken 6 to 7 minutes until golden flip
  4. Step 4: Cook other side 5 minutes until almost cooked through
  5. Step 5: Top each chicken breast with mozzarella slices and cherry tomatoes
  6. Step 6: Cover pan cook 2 to 3 minutes until cheese melts and chicken is cooked through
  7. Step 7: Drizzle generously with balsamic glaze
  8. Step 8: Top with fresh basil serve immediately
