Caprese Chicken

Five ingredients, twenty minutes, looks like a restaurant dish. Golden chicken topped with melted mozzarella, burst cherry tomatoes, fresh basil, and balsamic glaze. The 20 minute dinner that impresses guests without any actual effort.

Ingredients
  

  • 4 chicken breasts
  • 8 slices fresh mozzarella
  • 2 cups cherry tomatoes halved
  • Fresh basil handful
  • 4 tablespoons balsamic glaze
  • Salt and pepper
  • 2 tablespoons olive oil

Method
 

  1. Step 1: Season chicken generously with salt and pepper
  2. Step 2: Heat olive oil over medium high heat
  3. Step 3: Cook chicken 6 to 7 minutes until golden
  4. Step 4: Flip cook other side 5 minutes until almost cooked through
  5. Step 5: Top each breast with mozzarella and cherry tomatoes
  6. Step 6: Cover pan cook 2 to 3 minutes until cheese melts and chicken cooked through
  7. Step 7: Drizzle generously with balsamic glaze
  8. Step 8: Top with fresh basil serve immediately

Notes

— Good balsamic glaze makes
enormous difference
— Cover pan to melt cheese
without overcooking chicken
— Pound chicken to even
thickness for even cooking
— Serve with crusty bread to
soak up all the juices
