Cheesy Beef and Rice Skillet

The most filling 20 minute dinner on this entire list. Ground beef, rice, broth, taco seasoning, and melted cheese all in one skillet. Rice absorbs all that beef flavor as it simmers. Budget friendly, crowd feeding, completely satisfying.

Ingredients
  

  • 500 g ground beef
  • 1 cup long grain rice
  • 2.5 cups beef broth
  • 1 packet taco seasoning
  • 1.5 cups shredded cheddar cheese
  • Salt and pepper
  • Sour cream salsa cilantro to serve

Method
 

  1. Step 1: Heat large skillet over medium high heat
  2. Step 2: Add ground beef break apart cook 8 minutes until browned
  3. Step 3: Drain excess fat
  4. Step 4: Add taco seasoning stir to coat
  5. Step 5: Add rice and beef broth stir well bring to boil
  6. Step 6: Reduce heat to low cover
  7. Step 7: Simmer 18 to 20 minutes until rice tender and liquid absorbed
  8. Step 8: Sprinkle cheese on top cover 2 minutes until melted
  9. Step 9: Serve with sour cream salsa and cilantro

Notes

— Don't lift lid while simmering
— If rice not tender add splash
more broth cover 2 more minutes
— Leftovers great for lunch
