Easy Chicken Fried Rice

The quick dinner idea for family that uses up last night's leftover rice and turns it into something incredible. Better than takeout, costs almost nothing, ready in 15 minutes. My family thinks this is a treat dinner. They have no idea how easy it is.

Ingredients
  

  • 3 cups cooked cold rice day old is best
  • 300 g chicken breast thinly sliced
  • 3 eggs beaten
  • 1 cup frozen peas and carrots thawed
  • 4 cloves garlic minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 green onions sliced
  • Salt and white pepper to taste

Method
 

  1. Step 1: Heat vegetable oil in large wok over highest heat until smoking
  2. Step 2: Add chicken in single layer cook 3 minutes without moving until golden
  3. Step 3: Flip cook other side 2 minutes until cooked through push to side of wok
  4. Step 4: Add garlic to empty space stir 30 seconds
  5. Step 5: Add peas and carrots cook 1 minute
  6. Step 6: Push everything to edges pour eggs in center scramble until 70 percent set
  7. Step 7: Add cold rice break up clumps mix everything together
  8. Step 8: Let sit 1 minute pressed against hot wok for crispy bits
  9. Step 9: Add soy sauce and sesame oil toss well
  10. Step 10: Top with green onions serve immediately
