Egg Fried Rice

Ingredients
  

  • 3 cups cooked cold rice day old
  • 3 large eggs beaten
  • 1 cup frozen peas and carrots thawed
  • 4 cloves garlic minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 green onions sliced
  • Salt and white pepper

Method
 

  1. Step 1: Make sure rice is cold and completely broken up — no clumps at all
  2. Step 2: Heat vegetable oil in large wok over highest heat until smoking
  3. Step 3: Add garlic stir 30 seconds
  4. Step 4: Add peas and carrots cook 2 minutes
  5. Step 5: Push to edges pour eggs in center scramble until 70 percent set
  6. Step 6: Add rice immediately mix everything vigorously
  7. Step 7: Let sit 1 minute against hot wok for crispy bits
  8. Step 8: Add soy sauce and sesame oil toss well
  9. Step 9: Top with green onions serve hot

— Cold day old rice is absolutely
non negotiable
— Highest possible heat gives
restaurant smoky flavor
— Don't stir constantly — let
rice sit for crispy bits
— Add any protein you have
