Garlic Butter Shrimp Pasta

Ingredients
  

  • 200 g pasta linguine or spaghetti
  • 300 g shrimp peeled and deveined
  • 3 cloves garlic minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 lemon juiced and zested
  • Fresh parsley chopped
  • Half teaspoon red pepper flakes
  • Salt and pepper
  • Half cup pasta water reserved

Method
 

  1. Step 1: Cook pasta in heavily salted water reserve half cup water before draining
  2. Step 2: Pat shrimp completely dry with paper towels
  3. Step 3: Heat olive oil and butter together in large pan over medium heat
  4. Step 4: Add garlic cook 1 minute stirring constantly until golden
  5. Step 5: Add shrimp in single layer cook 90 seconds without moving
  6. Step 6: Flip cook 90 more seconds until pink remove from heat immediately
  7. Step 7: Add drained pasta and pasta water toss everything together
  8. Step 8: Add lemon juice and zest red pepper flakes salt and pepper
  9. Step 9: Top with fresh parsley serve immediately

Notes

— Don't overcook shrimp —
remove moment they turn pink
— Pasta water is essential
for silky sauce
— Frozen shrimp works perfectly
thaw and pat completely dry first
— Leftovers cold next day as
pasta salad are incredible
