- Step 1: Mix your filling — chicken or beans with cumin garlic powder and paprika toss well to coat
- Step 2: Heat non stick pan over medium heat add tiny bit of butter let it melt and coat pan
- Step 3: Lay one tortilla flat in pan sprinkle half the cheese evenly across entire surface
- Step 4: Add filling to one half of the tortilla only spreading evenly
- Step 5: Fold empty cheese half over filling half press down firmly with spatula
- Step 6: Cook without moving 2 to 3 minutes until bottom is deep golden brown and crispy — resist the urge to peek constantly
- Step 7: Carefully flip in one confident move cook other side 2 minutes until equally golden
- Step 8: Slide onto cutting board let rest 1 minute before slicing — this stops all the cheese from sliding out
- Step 9: Cut into triangles serve immediately with salsa sour cream and guacamole
