One Pan Quesadillas

The absolute fastest dinner I know. Crispy golden quesadillas stuffed with melted cheese and whatever filling you have. 10 minutes from fridge to table. Kids go crazy for these every single time.

Ingredients
  

  • 4 large flour tortillas
  • 2 cups shredded cheese cheddar or mozzarella or mix of both
  • 1 cup leftover cooked chicken
  • shredded OR 1 can black beans drained
  • Half teaspoon cumin
  • Half teaspoon garlic powder
  • Quarter teaspoon smoked paprika
  • 1 tablespoon butter or oil for pan
  • Salsa sour cream guacamole to serve

Method
 

  1. Step 1: Mix your filling — chicken or beans with cumin garlic powder and paprika toss well to coat
  2. Step 2: Heat non stick pan over medium heat add tiny bit of butter let it melt and coat pan
  3. Step 3: Lay one tortilla flat in pan sprinkle half the cheese evenly across entire surface
  4. Step 4: Add filling to one half of the tortilla only spreading evenly
  5. Step 5: Fold empty cheese half over filling half press down firmly with spatula
  6. Step 6: Cook without moving 2 to 3 minutes until bottom is deep golden brown and crispy — resist the urge to peek constantly
  7. Step 7: Carefully flip in one confident move cook other side 2 minutes until equally golden
  8. Step 8: Slide onto cutting board let rest 1 minute before slicing — this stops all the cheese from sliding out
  9. Step 9: Cut into triangles serve immediately with salsa sour cream and guacamole
