Overnight Marinated Chicken

Two minutes of actual work on Sunday evening gives you the most flavorful chicken of the week on Monday. This quick meal prep idea requires the least active effort but produces the most impressive results.

Ingredients
  

  • 600 g chicken thighs or breasts
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 lemon juiced and zested
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper generously

Method
 

  1. Step 1: Mix olive oil garlic lemon juice zest oregano thyme salt and pepper in large zip lock bag or glass container
  2. Step 2: Add chicken to marinade making sure every piece is coated
  3. Step 3: Seal and refrigerate overnight or minimum 4 hours
  4. Step 4: When ready to cook remove chicken from fridge 10 minutes before cooking
  5. Step 5: Cook on grill pan or regular pan over medium high heat 6 to 7 minutes each side until cooked through
  6. Step 6: Rest 5 minutes before serving
