- Step 1: Season chicken with salt and pepper
- Step 2: Heat olive oil over medium high heat
- Step 3: Cook chicken 6 to 7 minutes until golden
- Step 4: Flip cook other side 5 to 6 minutes until cooked through
- Step 5: Reduce heat to low spoon pesto over each breast
- Step 6: Add cherry tomatoes to pan around chicken
- Step 7: Cover 2 minutes until tomatoes burst slightly
- Step 8: Add mozzarella if using cover 30 seconds until melting
- Step 9: Garnish with fresh basil serve immediately
