Pesto Chicken

The 20 minute dinner requiring least brain power on this entire list. Cook chicken, spoon pesto over it, add cherry tomatoes, wait two minutes. That is literally the recipe. Jarred pesto does all the flavor work while you do nothing.

Ingredients
  

  • 4 chicken breasts
  • 4 tablespoons jarred pesto
  • 1 cup cherry tomatoes
  • Half cup mozzarella torn optional
  • 2 tablespoons olive oil
  • Salt and pepper
  • Fresh basil to serve

Method
 

  1. Step 1: Season chicken with salt and pepper
  2. Step 2: Heat olive oil over medium high heat
  3. Step 3: Cook chicken 6 to 7 minutes until golden
  4. Step 4: Flip cook other side 5 to 6 minutes until cooked through
  5. Step 5: Reduce heat to low spoon pesto over each breast
  6. Step 6: Add cherry tomatoes to pan around chicken
  7. Step 7: Cover 2 minutes until tomatoes burst slightly
  8. Step 8: Add mozzarella if using cover 30 seconds until melting
  9. Step 9: Garnish with fresh basil serve immediately

— Good pesto makes real difference
— Don't move chicken while searing
— Serve with crusty bread or
over pasta
— Leftover sliced cold over
salad next day is incredible
