Prep a Big Taco Meat Batch

Cook once on Sunday and create four completely different dinners all week. This quick meal prep idea gives you tacos Monday, rice bowls Tuesday, quesadillas Wednesday, and taco pasta Thursday — all from one 15 minute batch cook.

Ingredients
  

  • 1 kg ground beef
  • 2 packets taco seasoning
  • Half cup water
  • 1 large onion diced
  • 4 cloves garlic minced
  • 2 tablespoons olive oil

Method
 

  1. Step 1: Heat olive oil in largest pan you have over medium high heat
  2. Step 2: Add onion cook 3 minutes until softened
  3. Step 3: Add garlic cook 1 minute
  4. Step 4: Add ground beef break apart cook 10 minutes until fully browned
  5. Step 5: Drain excess fat
  6. Step 6: Add taco seasoning and water stir to coat every piece of beef
  7. Step 7: Simmer 3 minutes until water absorbs and seasoning is fragrant
  8. Step 8: Cool completely divide into portions store up to 5 days in fridge or 3 months frozen
