Quick Beef and Broccoli

Ingredients
  

  • 500 g beef sirloin or flank
  • steak thinly sliced against grain
  • 3 cups broccoli florets
  • 4 cloves garlic minced
  • 1 teaspoon fresh ginger grated
SAUCE:
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • Quarter cup water
  • 2 tablespoons vegetable oil
  • Cooked rice to serve
  • Sesame seeds to serve

Method
 

  1. Step 1: Mix all sauce ingredients together set aside
  2. Step 2: Slice beef very thin against the grain — partial freezing for 20 minutes makes this easier
  3. Step 3: Heat oil in wok over highest heat until smoking
  4. Step 4: Add beef in single layer cook 90 seconds without touching
  5. Step 5: Toss beef cook 30 more seconds remove to plate
  6. Step 6: Add broccoli to same wok stir fry 3 minutes until bright green and slightly tender
  7. Step 7: Add garlic and ginger cook 30 seconds
  8. Step 8: Return beef to wok pour sauce over everything
  9. Step 9: Toss constantly 1 to 2 minutes until sauce thickens and coats everything glossily
  10. Step 10: Serve immediately over rice topped with sesame seeds

Notes

— Thin slicing against the
grain is absolutely essential —
thick beef will be chewy
— Partial freezing makes
thin slicing much easier
— Don't overcook beef —
it cooks incredibly fast
when sliced thin
— Sauce doubles well —
make extra and use
on chicken or noodles
