Ingredients

  • 4 salmon fillets (about 6 oz each), skin-on or skinless
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon neutral oil (avocado or vegetable)
  • 1 teaspoon toasted sesame oil
  • 2 green onions, thinly sliced
  • 1 teaspoon sesame seeds
  • Pinch red pepper flakes optional

Method

  1. Whisk the honey, soy sauce, garlic, ginger, and rice vinegar in a small bowl until smooth. Set aside.
  2. Pat the salmon fillets very dry with paper towels and season both sides with salt and pepper. Heat the neutral oil in a large skillet over medium-high heat until shimmering.
  3. Lay the fillets skin-side down (or presentation-side down for skinless) in the pan, pressing gently with a spatula for 10 seconds. Cook undisturbed for 5–6 minutes, until the opaque color has crept about two-thirds of the way up the sides.
  4. Flip the fillets, reduce heat to medium, and pour in the glaze plus the sesame oil. Baste continuously for 2–3 minutes until the glaze thickens to a syrup and the salmon flakes easily but is still slightly translucent in the center (125–130°F).
  5. Transfer to plates, spoon over the pan glaze, and top with sesame seeds and green onions. Serve immediately.
