- Step 1: Preheat oven to 220C or 425F while you prep everything
- Step 2: Pat chicken thighs completely dry with paper towels
- Step 3: Mix olive oil garlic powder Italian seasoning smoked paprika salt and pepper in small bowl
- Step 4: Rub seasoning mixture all over chicken thighs generously
- Step 5: Place chicken on large sheet pan skin side up
- Step 6: Arrange all vegetables around chicken in single layer
- Step 7: Drizzle remaining olive oil over vegetables season with salt and pepper
- Step 8: Roast 20 minutes until chicken skin is golden and crispy and internal temp reaches 75C
- Step 9: Garnish with fresh parsley serve immediately straight from pan
