Ingredients
  

  • 8 chicken thighs bone in skin on
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper generously
  • Fresh parsley to serve

Method
 

  1. Step 1: Preheat oven to 220C or 425F while you prep everything
  2. Step 2: Pat chicken thighs completely dry with paper towels
  3. Step 3: Mix olive oil garlic powder Italian seasoning smoked paprika salt and pepper in small bowl
  4. Step 4: Rub seasoning mixture all over chicken thighs generously
  5. Step 5: Place chicken on large sheet pan skin side up
  6. Step 6: Arrange all vegetables around chicken in single layer
  7. Step 7: Drizzle remaining olive oil over vegetables season with salt and pepper
  8. Step 8: Roast 20 minutes until chicken skin is golden and crispy and internal temp reaches 75C
  9. Step 9: Garnish with fresh parsley serve immediately straight from pan
