- Step 1: Preheat oven to 220C or 425F
- Step 2: Mix honey mustard olive oil garlic dried thyme salt and pepper together for glaze
- Step 3: Toss potatoes and carrots with half the glaze spread on sheet pan
- Step 4: Roast 10 minutes
- Step 5: Toss chicken thighs in remaining glaze
- Step 6: Add chicken to pan with vegetables
- Step 7: Roast 15 more minutes until chicken is cooked through and glaze has caramelized
- Step 8: Garnish with fresh thyme serve immediately
