Ingredients
  

  • 400 g spaghetti or linguine
  • 2 cans good quality
  • crushed tomatoes
  • 6 cloves garlic thinly sliced
  • 4 tablespoons good olive oil
  • 1 teaspoon sugar
  • Half teaspoon red pepper
  • flakes optional
  • Salt very generously
  • Fresh basil generous handful
  • Parmesan to serve

Method
 

  1. Step 1: Cook pasta in most heavily salted water you've ever made — this is Italian cooking rule number one
  2. Step 2: While pasta cooks heat olive oil in large pan over medium LOW heat
  3. Step 3: Add garlic slices cook slowly 5 to 6 minutes stirring occasionally until golden and sweet — do not rush this step
  4. Step 4: Add red pepper flakes if using cook 30 seconds
  5. Step 5: Add crushed tomatoes sugar salt increase heat to medium
  6. Step 6: Simmer 10 minutes stirring occasionally until sauce thickens slightly
  7. Step 7: Taste and adjust salt — should taste bright and well seasoned
  8. Step 8: Drain pasta add directly to sauce toss well
  9. Step 9: Top with torn fresh basil and generous amount of parmesan

— Good quality canned tomatoes
make an enormous difference here —
