- Step 1: Cook pasta in most heavily salted water you've ever made — this is Italian cooking rule number one
- Step 2: While pasta cooks heat olive oil in large pan over medium LOW heat
- Step 3: Add garlic slices cook slowly 5 to 6 minutes stirring occasionally until golden and sweet — do not rush this step
- Step 4: Add red pepper flakes if using cook 30 seconds
- Step 5: Add crushed tomatoes sugar salt increase heat to medium
- Step 6: Simmer 10 minutes stirring occasionally until sauce thickens slightly
- Step 7: Taste and adjust salt — should taste bright and well seasoned
- Step 8: Drain pasta add directly to sauce toss well
- Step 9: Top with torn fresh basil and generous amount of parmesan
