Ingredients

  • 500 g ground beef
  • 80/20 fat ratio is best
  • 1 packet taco seasoning
OR homemade below
  • Quarter cup water
  • 8 taco shells hard or soft
  • 1 cup shredded cheddar cheese
  • 2 cups shredded iceberg lettuce
  • 2 ripe tomatoes diced small
  • Sour cream and salsa to serve
HOMEMADE TACO SEASONING:
  • 1 tsp cumin
  • 1 tsp chili powder
  • Half tsp garlic powder
  • Half tsp onion powder
  • Half tsp smoked paprika
  • Quarter tsp oregano
  • Salt and pepper

Method

  1. Step 1: Heat large pan over medium high heat — no oil needed beef has enough fat
  2. Step 2: Add ground beef break apart immediately into small pieces with wooden spoon or spatula
  3. Step 3: Cook 8 to 10 minutes breaking up constantly until completely browned with no pink remaining — don't rush this step
  4. Step 4: Tilt pan carefully and spoon out excess fat — leaving a little is fine and adds flavor
  5. Step 5: Reduce heat to medium add taco seasoning directly onto beef
  6. Step 6: Add quarter cup water stir everything together coating every piece of beef
  7. Step 7: Simmer 3 minutes stirring occasionally until water mostly absorbs and sauce thickens around beef
  8. Step 8: Taste and adjust seasoning — needs more salt than you expect
  9. Step 9: Warm taco shells in oven 3 minutes or microwave 30 seconds
  10. Step 10: Set up toppings in small bowls taco bar style — everyone builds their own
  11. Step 11: Spoon beef generously into shells serve immediately with all toppings

Notes

— 80/20 ground beef gives
best flavor — leaner beef
goes dry and crumbly
— Breaking beef into tiny
pieces while cooking means
better seasoning coverage
and better texture in shells
— Taco bar setup means
everyone happy —
especially important
with picky kids
— Leftover beef is gold:
use in quesadillas burritos
over rice or stuffed
into jacket potato next day
